It is pretty insane the times we are spending these days. In our lifetime I don’t think we have ever been bound to our homes as we are today.
I have had a deep passion in the kitchen, I always enjoy cooking at all the major holidays and being somewhat creative with the meals we put on the table. From Thanksgiving to Super Bowl Sunday’s my love of food is a creative outlet that comes and goes.
This past weekend, we needed lunch and the thought of ordering in was not enticing. We had some ingredients in the fridge and we conducted our best version of chopped.
- 1/2 Onion
- 1 minced garlic
- Cajun Season 2 tablespoons
- 1-2 carrots sliced
- 3 potatoes chopped (we used red)
- Polish Sausage Sliced (1lb)
- Olive Oil
- Salt/Pepper
- Get the pan hot on Med/High heat with some olive oil, toss garlic, onion, carrots in the pan until fragrant
- Add the chopped potatoes and reduce to medium heat
- Stir well, about 5 minutes or a listen to your favorite song
- Add the sausage with the seasoning. Keep the stir on for another 4-6 minutes.
- When the potatoes are soft, take a little taste and at this point you should be good.
It was a different but fun lunch. A bit hearty, we didn’t have dinner that evening until late because it was so filling.
